...and (in my experience, over 95% of the time) code documents are longer vertically than horizontally, thus making it a more efficient use of screen real estate to have the monitor in a portrait orientation.

If it’s one of the cylindrical Mac Pros, it’s probably just running Thunderbolt to each screen...they’ve got like 4 Thunderbolt ports on them.
