    Was talking about gourmet scotch eggs with a friend the other night. The ideas included using quails eggs; and doing n’djula ones. I’ll add Lincolnshire sausage-meat to the list...

    It doesn’t surprise me- Catherine Cleary is a very inconsistent reviewer- she recently released a “definitive” list of top 100 restaurants which missed out a few very obvious candidates. When I spoke to a couple of the owners, it turned out that she was one of the few reviewers that had not visited them. So much for

    I recently had a black pudding soft scotch egg served with asparagus- sublime.

    Repalce it with Sussex Pond Pudding- it’s also a suet pud so not a million miles away from a Spotted Dick. Or Jam Roly Poly.

    One local brewery here in Ireland (Yellowbelly) teamed up with a local soda maker (Black Castle) to make a hopped soda, which was excellent- hopped with Citra and Huell Melon.

    Also should point out that your boil should be a simmering boil, not a rolling boil. And use the smallest pan you have in order to better distribute heat.

    Put eggs in boiling water. Boil for 3 minutes. Switch stove off and leave the eggs/water to cool.

    In order for something to be “loaded” they need to be stuffed with whatever the extra ingredient(s) is/are. These are “coated” at best.

    For what it’s worth, Mrytle Allen died Tuesday last. She’s probably unknown outside of Ireland but she was an amazing champion for food here, founder and owner of Ballymaloe; and first woman to earn a Michelin star in the UK/Ireland category.

    Exactly my thoughts and why I think Dr Cabral’s opinion on the subject is bullshit. My guess is his company wants to get rid of natural cork products and replace them with synthetic substitutes.
