It’s... not really easy. In fact it’s probably kind of expensive since they need to create new assets and have a bunch of voice actors re-record a shitload of dialogue in a bunch of different languages.

You’re not wrong, but the developers have come out and said this change wasn’t mandated by corporate, it’s something they wanted to do internally, while still trying to pressure corporate to meet their demands.

How exactly does this change established lore? They’re revealing that McCree isn’t his real name, which is something that was already implied in dialogue in the game, and working it into the story by having him cast aside his alias and using his real name.

Him using aliases was part of his schtick before the game even launched. They had social media posts by him using the alias “Joel Morricone” as part of the pre-launch worldbuilding stuff.

You’re using the word “reactionary” wrong, btw. It has a very specific meaning, not just “in reaction to.”

To be fair, they’re not trying to make everyone forget the old name. They’re keeping it as part of his backstory and leaning into some previous hints that Jesse McCree wasn’t his real name to justify the change.
