I did like that the first prequel went for an Apple store aesthetic. Made since since Ep I was set in peacetime. From Ep II onwards the galaxy is in a constant state of war/conflict, so designs get more utilitarian and people are trying to repair/mod their tech to last as long as possible before it has to be replaced.

Exactly! It was a great way to illustrate how the host's minds are different than human ones. I know there are some criticisms about how Dolores' storyline played out, but it's the best example of the show putting the audience into a truly alien perception of how time passes and memories are experienced.
