Use the Food Lab’s method and it’s damn close to actual pizza, not just an unfolded quesadilla. And better than using something like a boboli crust. You do need a cast iron skillet for it though.

Ordering a personal pizza is terrible. But making them using leftover flour tortillas (because you always end up with leftover tortillas after making fajitas) at home is great.
