The pâté sounds interesting. I always like to hear about the things that you would never think about cooking a different way. Like ChefSteps did the “fried chicken” where they sous vide the meat first.

I’d guess you’d make them in like mason jars? That makes sense to me since they’re water tight and food safe.

less hassle mostly. regardless of whether I sealed it or not I’d be using a magnetic clip to keep it in place and easily removable.

I’ve seen a lot of recipes going both ways.

They were fantastic and easy! 178 degrees for 8 hours and finish with a good sear or fry depending on your sensibilities.
