I just love how the chefsteps recipe was like, “yeah, you don’t have to temper those eggs.” Now I can make creme brulee as quick as I can separate the eggs.

It’d definitely have to be a lower yolk to cream ratio. The fewer eggs per cup of cream/milk should change the consistency enough. Even with creme brulee when it is warm it is still mostly in a liquid state.

I am voting for a custard ice cream!

This also works really well for leafy greens in general. I have a baggy of spinach that is still doing well after almost a week in my fridge.

I did a test a couple weeks ago on just a turkey breast to see if I wanted to sous vide my whole bird this weekend. I found that even after searing, the skin came out far more rubbery than I would have preferred.

I was actually thinking of making a whole chuck roast and making chili out of it so I’d love to see how this turns out.

what about like a pumpkin bread? With the cheese cake we have seen how a custard might be done, and also, it is FREAKING PUMPKIN BREAD!!!!!!!!!
