Well, the first 10 eps or so of season one are a lot of worlbuilding and finding its feet, but it has some foreshadowing and plot elements that pop up later. They however mostly skippable, they look much better on second viewings. You could just start with ep 1.15 or 1.16 and see if you like those - it gets better…

Yeah, the long list of adaptations is sort of disappointing. I wonder why there's so few new sci-fi/fantasy stories made for film.
