There's a chain of sandwich shops called Firehouse Subs that do a pretty mean brisket sandwich that also includes mayo. Being a Texan, where BBQ (specifically brisket) is religion, I originally considered the inclusion of mayo as blasphemy.

In Texas, try to find some of Salt Lick's BBQ sauce. It also comes in Chipotle and Hot (which is made with habnero but still only about a medium heat). It's a mustard-based sauce (instead of the sugary tomato-based ones) and does what a good BBQ should do: Make meat taste like meat.
