Yah, I agree. If I wasn’t making a recipe that I’m comfortable with, or an ingredient that I couldn’t confidently chop in short order, I would prefer to have the materials prepped beforehand.

I agree that the mechanisms could use some more polish. Most of the time, I feel like I’m just guessing at these things. You should try pressure cooking a whole chicken and comparing your results. I take a whole chicken, put 2 quarts of water in the pot, whatever seasonings I like, then lock it down and get it up to pressure. Once at pressure, I give it 20 minutes, then turn off the heat and let it release naturally.
