I'm not exactly sure how a spatchcocked chicken would cook faster than quarters. It would definitely require less effort to prepare as there are fewer pieces to move around, but the overall time required to cook shouldn't be less.

I think that the biggest issue that people face with making scrambled eggs is that they use too much heat. When your scrambled eggs get watery, it is because the proteins are squeezed so tight that they push the water out.
