All my ales that I brew are fermented between 68 and 72. I may do a lager later on but I prefer ales over lagers. You're right, stouts are the beer that has no business being below 45 degrees.

Still stand by my statement. It came from a brewer that's from Nuremberg.

The difference is that Brewing uses heat, Lagering uses cool fermenting with a yeast that works from the bottom up. Hence.....no frost brewing exists.

Go talk to a brewer and they will tell you the same. I'm friends with a guy who owns Franconia Brewing in McKinney TX, he is from Nuremberg and his family has been brewing since 1800. This came directly from his mouth. I'd rather taste my beer than just use it to cool down. That's what water is for.

Only piss beer is cooled to that level. Good beers are best tasted at 40-50F.
