I keep full sticks of butter in the fridge, so I can cut off what I need for a recipe. Once some has been cut off, I put the remainder of the stick into a butter dish that snaps closed (a remnant of cats who liked to knock my butter dish off the counter and lick it directly) and kept in the cupboard.
