We do have the assurances and digital rights. At least we do in the EU. Not sure if America finally got their act together on that yet, but in the EU it’s illegal to remove a digital game from being downloadable and playable after it’s been purchased.

Pretty sure that’s what summoning is for. I used to summon for every single boss when I was new to Souls. It made the game insanely easy, and it still felt fun (ganging up on a boss made it feel like an MMO boss fight).
Your opinion is 100% valid, and the exact reason I love mods (tailoring games to meet your own criteria for being enjoyable is awesome), but I still don’t believe that the difficulty of Souls prevents all those things you loved in an “easier” game.
