There's a course in flow cytometry held yearly at University of New Mexico/Los Alamos that's a great place to start if you want to get into it. It can be sort of pricey but the lab experience alone you get with it is worth it. I have to do a lot of flow for my job and it really helped me.
I'd say anything that dovetails with the pharma industry, i.e. immunology/neuroscience/cancer research. Flow cytometry and assay development are two really good skills you can apply to just about any field, and you can easily gain experience with both in most research grad programs.
