The first trilogy is pretty free of continuity. While it has no official subtitle, it's generally called the Thrawn Trilogy. Start with Heir to the Empire. If you like it, you can continue on.

I'm a lefty. While I was taught to use the mouse in my right hand, I switched to left after getting a bit of RSI. However, I still mostly game with the right. These days, I can switch back and forth with no trouble.
