I'm an artist as well and I much prefer standing when I'm working, for the most part. It lets you use your entire arm for drawing instead of just finger/wrist action and it moves you away from the piece so you don't get detail-oriented too quickly. There's a reason for easels and angled drafting tables.

Honestly, Dark Souls isn't that difficult. The game just punishes people that try and play macho. Once you get the timings of enemies down then the game's pretty simple.
