Salt crusting meats only really works when you can brown the meat beforehand because the captured moisture prevents the surface of the meat from browning and turkey needs to have a crisp brown skin to be palatable, to me at least.

I know the salt is removed, I’ve used salt crusts for fish before but in those cases it was only 3-5 pounds of salt and not 16.
