Typically in America, “last order” and the closing time are the same, except at some bars with kitchens where the kitchen closes before the bar does. The assumption is that closing time is when no one else is admitted, but the people inside will still get to complete their meals.

You could just ask whatever place in advance, tell them how many, tell them that you would be there a while. and they can tell you if they can accommodate that. Many restaurants have a space for meetings

If you keep ordering drinks or food, pretty much any place will let you camp out as long as you like.  You could also move to an informal pub that doesn’t take reservations and hang out and drink there.

That is 100% absolutely true. My dad always changed his religiously at 3000 miles. How long his cars have always lasted (longer than anyone else I knew) were a testament to this practice. I usually would buy his cars from him just because I knew how well they were treated.
