I didnt know these menus were a thing of the past, i see them all the time still, usually at fancy italian places or argentine steakhouses.
You really have to know yourself and your own body. Some people can handle volume a lot better than others. Myself personally, my body handles volume like a champ which is nice as high volume is useful for my goals of muscular hypertrophy. However, if other people were to train like I do they’d likely burn out.
When you’re dealing with 65g of sugar in a single 565g bottle, the difference between different types of sugar is academic.

Here in New England, Mutsu are widely available and quite excellent for pie. They’re very firm and also quite large, which is a labor saver.
Early June Transparent and Rhode Island Greening are excellent, also. They’re firm, tart apples.
Gravenstein’s actually widely available in northern California. Northern Spy is a typical baking apple in some other areas (NY, PA). Not sure what other US regions use for their go-to baking apple.
Hmm, I seem to have pretty good luck. Though I’m willing to try others. Last time I made one the liquid from the apples mixed with the heated brown sugar to form an almost caramel consistency. It was delicious.
We actually have a variety of choices - its just that most of them are aimed at eating fresh.
Actually the US has plenty of good baking apples its just that the large industrial size orchards only focus on 5 or 6 varieties that are good for eating.
Yeah, we are not into baking as much as the U.K., as evidenced by the contestants on the GBBO. The short-lived American version contestants were absolutely clueless and were fumbling around with freaking measuring cups.
