Wow you must hang out with some wimpy friends because the Salsa Verde ones while quite tasty are by no means hot. Heck I am modifying the recipe. Substitute egg wash for mayo, add hot sauce of choice to the egg wash, dip in egg wash and then dredge in crushed up Salsa Verde Doritos.

Well I agree with your #HomemadeNatch I find it interesting that you like aioli but not mayo since they are essentially the same thing. Have you tried making your own homemade mayo? Pretty much the same process minus the garlic and usually less of the acidic liquid.

One is two much much liquid (generally lemon juice), two under-whipping it if doing it by hand and not getting a good emulsion, or over-whipping it in a food processor once again not getting a good emulsion, three adding all of the liquid at the beginning
