ESP means electronic stability program which I believe encompasses both TCS and SC. At least in my ML it lets me do pretty much whatever I want with no computer intervention apart from ABS. Your car just may be gripping too well, push it a little harder! :)

that's because the car wouldn't turn otherwise, then it would catch grip and turn suddenly so I'd have to counter steer. Crappy tires will do that.

Definitely. I am not an experienced driver by any means, and the super mom-mobile steering rack doesn't help!

Stability control is off. The issue was the tires mainly (all seasons nearing the wear bar), and the fact that it is a 2 ton SUV in slushy snowy winter conditions.
