Having owned both, and living in an area where quattro isn’t needed, I‘d say the Coupe GT was better in every area. It handles better, gets better fuel economy, accelerates faster, etc. The Coupe was light and fun the drive, while the Quattro versions seemed slower and more ponderous.

I never had any problem running mine with regular gas, but I used premium when I was towing. I also got as high as 16mpg on the highway, so that was a slight improvement over the 88 F250 I had that got between 10-12.
