You're not wrong, I just find it amusing that you're worried about the financial health of a 3 Michelin star restaurant that's not only one of the most expensive in the country, but also doesn't have to deal with the (sometimes substantial) inventory-to-diner losses that are standard at other restaurants.

It's not like that would cripple Alinea, but it's unreasonable to expect that they should take a loss, even if it isn't enormous, just to satisfy customers who changed their plans.
