I don't think it's really a technical thing, I think it's more in terms of (environment) design and art. I don't think their design and art teams are used to "open environments" yet that are interesting.

From my experience, it is usually a distilled MIDI format. I.e. MIDI is used during production (by the audio guy), and the console manufacturer's audio tools convert them into something propietary (MIDI is an industry standard non-propietary format).
