Regarding oil: you shouldn’t fry with extra virgin olive oil, as it has a smoke point well under proper frying temperatures, but non-virgin olive oil is great for frying as it doesn’t smoke until about 450F, higher than canola which only makes it to about 400F.

Ok, I’m going to share the greatest latke recipe, ever. I grew up in a Jewish family, decades of latkes. Mountains of potatoes, onions, eggs, flour have passed before me. Once I developed this recipe, I will never go back. I want easy, fluffy inside, shatteringly crunchy outside, minimum cleanup latkes.
A lot of recipes let the starch settle out of the drained liquid so it can be returned, but matzo meal also works as a binder, texture lightener, and source of toasty flavour. It’s also omnipresent in Jewish kitchens, so it’s a go-to carb (I use it instead of hardtack or common crackers in chowder, for instance).

The problem is that even the GM employees don’t actually know what’s going to happen. There hasn’t been a plan announced as to the target for layoffs. Everything you’ve heard, even though it comes from GM employees own mouths, is speculation.
