Part of engineering is not releasing weapon systems that are inherently more dangerous to its users than the enemy. Another part of engineering is effectively recognizing the limitations of what you can produce in terms of materials, time frame, and personnel.

The blanket statement that “German engineering was superior to that of the allies...” is one of those things I roll my eyes at.

Totally agree. Pretty much the success of episode 4 and 5 were due to the simple fact that Lucas had limited control on his films. Once the studio figured out that they were printing money, he gained full control. Starting with 6...it was a rapid decline.
