I agree that that's needlessly large, but I think you still might be missing the preparation issue. The company is signaling here that these particular nuts aren't processed with wheat. If you know how food processing belts work, you know this is a big deal. A lot of companies use flour to tumble-clean their belts.

I have celiac disease. I asked a host once for a gluten-free menu, and he said, "Sure...if you think you need that." The tone was really dismissive. I've been so hesitant to eat at chains with gluten-free menus ever since. It really made me nervous. :/

Correct. It's not just about ingredients. This is especially true in cases where the item was made in a shared facility.

I feel you, but the term refers to preparation as well, not just ingredients. Also, gluten is used as a filler in a lot of meats, including some "brands" of hamburger. There are entire brands of deli meat I can't touch because of fillers and flavorings. So it's actually more important than you might realize.
