The reason is the Kaiju toxic blood. It causes environmental disasters, though is not really much of a direct poison. Punching, grappling, freezing or plasma guns, which cauterize wounds and vaporizes the blood, minimize the spilling of the toxic blood, which is why they tried anything before the sword.
