I like to make my dressing on the spot, single serving style. Lately I’ve been doing thousand island -ish with mayo, ketchup, dill relish, garlic, dijon mustard and a little shot of sweet chili sauce.
Not much. Season a little different but that’s taste. I usually go closer to 130F but that’s personal taste too. I’ll usually use my broiler to sear the outside because pan searing tends to smoke up the house and make my wife complain, but it works either way.
If you like a rare burger, it’s the only way to go. If you haven’t tasted a good, rare sous vide burger, then you just won’t understand and it can’t be explained to you. Besides... it’s not active time. You pop it in and go do something else until dinner.
125 for 40 minutes? That’s not even pasteurizing the middle. I love a sous vide burger but you gotta go longer than that or risk spending the next day in the bathroom.

I just wish they’d stop the nanny act on volume levels. Chuck roast is my absolute favorite sous vide fodder. I like mine more 131 though and go for anywhere between 24 and 48 hours. Our chuck roasts don’t come round though, but that makes them perfect for slicing leftovers for french dip sammiches.
