Zucchini, Fennel, and Leek Soup. Begin by caramelizing a few shallots with garlic. Then saute equal parts chopped zucchini, leek, and fennel. Pour in the blender and add chicken stock and a few healthy splash of half-n-half. Blend until soup is at your desired texture. So good.
Celery is delicious with garlicky things like hummus or black eyed pea dip, on toast. Otherwise I only like it roasted.... in the bottom of a pan of fat drippings.
Love your username! Takes me back to Sunday brunches in the South :)
I developed a very good spiced carrot lentil soup for this schmancy cafe I used to work for and it is still my favourite entirely vegetarian/vegan soup. For a home-sized soup pot, roughly chunk up 3 small/medium cooking onions and saute them in plenty of oil until very dark brown. Like, leave them be for ~7-8 min on…
My favorite is the easiest:
Hot ham water.

I forgot Gulaschsuppe and kinja won’t let me edit!
Mmmm...
Spicy Pumpkin Soup!
Slacker black bean soup:
Pumpkin - roasted whole in oven then fry some onion, chilli, cardamon pods, coriander seeds add pumpkin and little water to make more soupy. Eat.
Souping.
I just made potato soup for dinner, this nearly took the joy out of it.
If it was possible to have soup for every meal, I would. My sink is perpetually full of bowls and spoons. My husband tolerates it in the cooler months, but summer is the period where I have to sneak in a canned soup (I know, I know) for lunch to satisfy my cravings.
I’m right there with you with some soup love. I call it my french peasant food. I’m not really into refined anything, so all of my soups have big chunks of whatever and are meant to be as filling as possible.
Christ, now I want soup...
I once saw this diet show that was all about trying to get two women with an average body type down to a size 00. One of the women tried the pea soup diet and she was supposed to try eating pea soup for a week. I think she made it 3 days until she had to switch to another fad diet. The pea soup turned her tongue…
