I think your math there is a bit unsubstantiated, but regardless it’s an odd difference in price considering the game was already completed and this is more or less a straightforward

It’s probably because of the large disparity in price, with the Wii U eshop version costing $19.99, and the Switch eshop version costing $59.99 ($10 more than the launch price of the Wii U version). Why the price hike over the original’s launch price?

I think some pundits are quick to forget that many gamers are getting older, have families and/or jobs, and most importantly, less free time. Yes. These are all good suggestions. If there’s one company that is reticent to update their games based on feedback though, I believe it’d be Nintendo unfortunately.
