Just because they are using 3D models it doesn't mean it has to look ugly. If the original art is bad, the model is also going to bad.

I've seen lots of awesome artists who still have to draw rough sketches and guidelines when drawing. I think some people prefer to do it like she did, but most people stick to the guideline/rough sketch thing.

These books expect you to start copying other artists as a method of training.
