There is a regular chat headset that is affordable. Then there is an adapter that allows any 3.5mm headset to plug into it. Then there are people like Polk and TB making headsets that have the adapter included (as does the $80 MS one).

Very few headsets are true surround sound. They are simulated. For the DVR snap it, choose end clip, select up to the last five minutes, trim, rinse and repeat. "Xbox record that" has been horribly unreliable for me, sometimes it records 28 seconds of something I did five minutes before issuing the command.
