It's definitely possible, just not very reliable. There are theme customizers like Winterboard and Dreamboard, with the latter letting you run completely different themes with different lock screens. My iPod runs a theme that looks just like windows 8 and has a customized lock screen, but it crashes quite regularly.

I rage quit rooting mine after I tried and failed numerous times to downgrade to 2.3.3. Sad panda.
