It should be noted that Oberyn has been made more heroic and sympathetic than in the book (with the help of Pedro Pascal). If there's probably a sadistic/shocking intent, it also arguably works better for a TV show.
And while Martin certainly made the "being the nice guy won't make you win" point and show some nihilism…
