GWX Control Panel is free, and scrubs your system of that Win10 upgrade nag. You *could* do what Lightice suggests, and it does work for a bit, but I find Microsoft sneaks in and reactivates the update after awhile, whereas with GWX I don’t get that.

Just remove and hide the right update from your Control Panel. Google is your friend. No-one’s forcing you to use Cortana, though, in fact I’d recommend you turn it off, along with the other gross privacy violation software that you can actually interact with in Windows 10. And Classic Shell can get you back almost

Or you could get yourself Classic Shell and not pay a cent, except any donation you may wish to give to the hardworking people at the project. It’s arguably the best way to get classic functions both in the start menu and Windows Explorer, and pick and choose which elements of the newer functions you wish to keep as
