They were in the castle under the guise of being rat catchers, which while Cheese was, Blood was not. The dog was a working dog who was seen earlier in the episode working with Cheese to catch rats.

The dog tracks the rats (keener senses and all). They had to look like they were doing their Rat-Catching duties. That’s why they were carrying and laying out the rat traps!
I know they want to open up the world a bit (a common criticism from last season), but there was something awkward about starting at The Wall (with voice over that sounded an awful lot like Jon Snow).
