@lhed: I disagree. Emails still actually DO get printed occasionally. Also, I often have a hard time finding the address for someone who initiated the inital chain, 20 emails ago. It is nice when they have their information in the signature.

TrueCrypt your "My Documents" folder, then point every single stinking thing of value in there (outlook.pst, important apps data, firefox profile, i don't care).
