I keep a jar of zest in the freezer. Before I juice a lemon, I zest it and add it to my jar. That way it’s not all floppy floppy, and it makes it easier to squeeze every bit of juice out of too. Because I am extra, I have one for limes, oranges, and grapefruit too. It takes up way less space than the whole peels.
