Banana and/or chocolate cream pie is pretty much the ne plus ultra of desserts to me. I’ve tried making both at home. They come out . . . okay. There’s clearly some sort of wizardry going on with egg whites that I’m not doing; I’m just not achieving Fluffiness Liftoff.
