The Deore XT-II rings were exremely elliptical, and got progressively less so further down the product range. Pro racers disliked Biopace because they interfered with a smooth spin, and the rings exacerbated knee problems for others.

A 36t Narrow-wide single front ring will solve all your problems. Trust me, on an old mountain bike like that, top speed won’t be a factor unless you’re coasting downhill.
