Thanks for the explanation on woks. I have the same problem but use a flat bottom wok on gas stove. Still comes out mushy. I'll reduce the amount of sauces and oils and get the pot blistering.

Yes. Heavily salting (course salt) choice grade beef for hone hour per pound will do absolute wonders to the steak. Just make sure you rinse the steak and pat it dry, and do not use a salt based seasoning afterwards, just put some pepper or whatever else you like and throw it on the fire.
Put your cast iron skillet in the oven and put it on as high as it can go, 500 +. after it's heated up, make sure you get your gas stove top on absolute high. If it's electric then it might not get hot enough. Wear gloves. Prepare for glory.
