Yeah, I think each city has a variation on the theme - and Chicago has at least two (quite a few places around here pile the cheese about 3/4 inch high on thin crust pizza), but it’s a similar theme.

Those chain locations were shit - and if anything, they weakened the reputation of the originals.

That’s pretty standard across the Midwest- the author isn’t claiming it was invented here, they’re just saying that’s what we eat the most of in Chicago.  And that’s true.
