After reading all these replies, I guess my kitchen is more organized and welll stocked than I thought it was. Tipping a few shelf-stable goods I generally have on hand into a bowl into a tin doesn’t elicit any more stress than going to the store does for a particular cake mix does.
The only times I’ve bothered with cake flour, I didn’t feel like the hassle was worth it. I like my cakes with all-purpose and a bit of almond flour. I guess this will be a short conversation, then. :)
