Just ask for “Asian Spicy” or convince the server some how that you really mean it.

At a Thai place in the town I went to college, we’d be sure to specify Thai Spicy so they knew we were serious. Even then the spiciness could vary a bit.

They cut their responsibilities, so a cut in pay makes sense. They are no longer trying to get them to be good servers. $25 an hour for running drinks is pretty good pay.
