I read that chapter this morning, and it struck me as how odd it seemed to be to put that scene in that last episode. I do hope you're right though, and that they add the end of the scene into next season, very powerful, and also a reminder of how much I both love and hate Martin's writing. The last line of that

Off the top of my head,

Really though, with having the big, all out finale last week, now they can tease us and whet our appetites for what's to come.

No less than 5 months or so seems to be the current average time bewteen a film release and DVD release, but with TV serials the DVDs generally show up shortly before the newest season airs.

I think varys finds out through Tyrion.... or perhaps the other way round. But it's not quite as described in the TV show. It's not really hinted at that he's still spry and not a dithering old man, moreso that his wit is as sharp as anyones and he's still extremely clever.

It isn't the same person, but in the book the bard who gets presented to Joffrey regarding the treasonous song does indeed have his tongue cut out, after being made to choose between hand and tongue.
