As someone who has a gluten-free family member by medical necessity, I will say that it’s been around since the ‘00s as a fringe market item (we found out in the mid ‘90s and really had to scrounge to find anything), but has gained mainstream traction in the last 10 years.

Gluten-free wasn’t a thing until fairly recently. I pick that, yeah.
