I’m a big fan of Splenda brown sugar. I don’t bake with it (just use it as a topping), but don’t see why you couldn’t. It doesn’t turn into the hardened brick, with the added benefit of fewer calories.

Grits are made from dried hominy while polenta is just dried ground corn. Hominy is made from whole corn kernels that have been soaked in a lye or lime solution to soften the tough outer hulls.

They are the same corn meal. I think of grits as a bit thinner and more likely with water and butter, whereas polenta is a bit thicker and more often broth based. Cream works with either.

I just came down here to ask how the two are different and am gratified a better authority than myself thinks they're the same.
