Also, if your bread is a "high hydration" dough, you can use the dutch oven technique as well. No water is necessary as the steam is generated from the water coming out of the dough. (see: Jim Lahey's no knead bread technique for more info)

While I understand the sentiment, many of us want that "little extra" which is why often dairy (sour cream, creme fraiche, butter, etc.) is added. Try it sometime, might find something new.
